Gejang (게장) is a traditional Korean dish made by marinating fresh, live raw crabs in either soy sauce (간장게장, ganjang gejang) or a spicy chili-based sauce (양념게장, yangnyeom gejang). The marination process uses the salt in the sauce as a curing agent, creating a raw-fermented dish with an intensely complex, deeply savory flavor. Ganjang gejang (soy sauce crab) is the more refined of the two: the crabs are submerged in a soy sauce brine and left to cure for several days to weeks. The result is a translucent, silky, cold crab with roe and internal juices that have been transformed into a rich, umami-packed custard. The soy-cured liquid itself becomes something extraordinary — salty, sweet, oceanic, and deeply savory all at once. Yangnyeom gejang uses a vibrant red sauce of gochugaru, garlic, ginger, fish sauce, and other seasonings.
