Modern commercial soju is diluted to about 16-25% alcohol and flavored with sweeteners — essentially a diluted alcohol product. Andong soju is the real thing: a true pot-distilled spirit with approximately 45% alcohol content, made by fermenting rice and nuruk (Korean fermentation starter) and then distilling the result. The flavor of Andong soju is complex, clean, and powerful. It has a pure, rice-forward flavor with subtle grain sweetness, a clean finish, and the characteristic warmth of a well-made 45% spirit. Connoisseurs compare it to premium Japanese sake-distillate or Chinese baijiu, but with a distinctly Korean character. It is typically served in small ceramic cups (잔) and sipped slowly rather than consumed in large quantities like modern soju.
