Soju (소주) is a clear, colorless Korean distilled spirit that is both the most-sold liquor in the world by volume and the most symbolically loaded alcohol in Korean culture. Hite Jinro's Chamisul (참이슬) and Lotte's Chum-Churum (처음처럼) — the two leading brands — collectively claim more bottles sold per year than any other spirits brand on earth.

Modern diluted soju (희석식 소주, huiseogsik soju) is produced by diluting high-proof ethanol with water and adding a small amount of sweetener, creating a smooth, clean spirit with minimal flavor complexity. Alcohol content ranges from about 16% in the fruit-flavored varieties to 25% in the standard green-bottled versions, with traditional undiluted soju reaching up to 45%.

Fruit-flavored soju (과일소주, gwail soju) — in flavors like strawberry, green grape, peach, apple, and yuzu — has driven dramatic growth in younger demographics and international markets since the early 2010s. These lower-alcohol (12–14%), sweetened versions are widely regarded as excellent gateway products for newcomers to soju culture.

The history of soju begins with the Mongol invasions of Korea in the 13th century during the Goryeo dynasty. Mongol forces brought with them knowledge of Arabic arak distillation technology — an aqua vitae-style spirit made by distilling fermented grain mash. Korean craftspeople adopted and adapted this technology, producing the earliest Korean distilled spirits (known as arakju, 아락주) in the areas where Mongol military bases were established, particularly around the cities of Andong, Kaesong, and Pyongyang.

This tradition of pot-distilled grain spirit became the foundation for premium traditional soju (including Andong soju, which still uses the original production method). In 1924, the large-scale diluted soju model was introduced, making the spirit dramatically cheaper to produce and therefore accessible to the entire population.

The modern soju industry was shaped by government regulations during the 1960s–1970s, when the South Korean government limited the ingredients that could be used in soju production (to preserve grain for food) and later implemented a policy requiring each province to consume only locally produced soju brands. This regional policy, relaxed in the 1990s, is the reason each region of Korea still has its own dominant soju brand with deeply loyal local consumers.

Soju drinking has its own elaborate social protocol that reflects the hierarchical Confucian values embedded in Korean social interaction.

Soju's place in Korean culture is difficult to overstate. It is the medium through which Koreans navigate social relationships — the lubricant of confessions, confrontations, celebrations, and grief. The Korean phrase 'soju han-jan haja' (소주 한 잔 하자, 'let's have a glass of soju') is among the most social, most loaded sentences in the language: an invitation to be honest, to be present, to be human with another person.

The soju bottle's green glass — the distinctive bottle that has remained essentially unchanged for decades — is one of the most recognizable objects in Korean visual culture. It appears in films, dramas, music videos, and street photography as an instantly understood symbol of Korean contemporary life: specifically of the difficult parts — exhaustion, loneliness, heartbreak, the pressure of competitive societies — counterbalanced by the pleasure of connection.

Soju is also the focal point of Korea's robust food pairing culture. The concept of anju (안주) — food specifically eaten while drinking, not as a meal — is central to Korean drinking culture. Samgyeopsal and soju; fried chicken and beer (chimaek); makgeolli and pajeon (scallion pancake) — these pairings are as culturally fixed as wine and cheese in European tradition, and violating them is considered mildly eccentric.
