수원통닭

Suwon tongdak (수원 통닭) is a style of fried chicken where an entire chicken is fried whole (통 means 'whole' and 닭 means 'chicken') in a large vat of oil at high temperature. This contrasts with modern Korean fried chicken chains which typically use cut-up pieces. The whole-chicken frying method produces a uniquely crispy skin that cracks like a shell, while the interior remains moist and tender. The chickens used for Suwon tongdak are typically smaller, younger birds — about 700 grams to 1 kg — chosen for their tenderness. The preparation is minimal and unadorned: the chicken is cleaned, lightly seasoned, and fried. There is no heavy coating or complex marinade. The result is pure, clean fried chicken flavor where the quality of the bird itself is front and center. Suwon's Yeongdong Market (영동시장) is the spiritual home of tongdak culture. Dozens of small vendors there have been frying whole chickens for 50-60 years, and the market has become a famous food destination. Eating tongdak in the alleyways of Yeongdong Market, standing or seated on small stools, tearing the chicken apart by hand, is an iconic Korean food experience.
